Recipe: Nduja Roasted Cod

This dish is a dream for a quick and easy meal for one. Just a handful of ingredients for a midweek belter. You can also double it up for 2 or double again for 4 and have an easy yet impressive dinner party dish.

I like the dish on it’s own with lots of oozy baked tomatoes but you can also add roast potatoes if you wanted an additional side dish.


1 fillet of Cod (skinless and boneless)
3 rashers unsmoked streaky bacon
1 Tbsp nduja paste
Mixed vine tomatoes
Salt and pepper
Olive oil


Pre-heat the oven to 180c and place a flat roasting tray in the oven to heat up. Season the cod lightly with salt and pepper then top with the nduja paste and spread it across the cod fillet. Place the bacon rashers on a flat worksurface side by side slightly overlapping, then place the cod fillet on the end of the bacon before wrapping over so that the cod ends up back on the same side with the nduja paste facing upwards.

Remove the pre heated oven tray from the oven and drizzle very lightly with olive oil, use kitchen paper to spread the oil evenly across the tray. Place the cod in the centre of the tray with the vine tomatoes alongside, season the tomatoes with salt and pepper and a little extra oil. Bake in the oven for 16 minutes until cooked through and serve.
